This has been my experience as well. We mostly get granny smith, fujis, gala and honeycrisp; and only the sweetest fuji apples come close to the honeycrisp. I often find myself thinking, "I love the crisp part of a honeycrisp, but wish they weren't so darn sweet".
the truth is, it's not actually a sweetness scale but a tartness one. the apple at the top isn't the sweetest but rather least tart, and on down. I'd say the Gala is the least tart in that list. All these depend on the climate in which they’re grown. In West Michigan where I grow fruit, Fuji is the sweetest you’ll get.
Cosmic Crisp Sweetness Levels. Growers of Cosmic Crisp are required to pick and sell only when the apples have a high starch content. It the starch level is too low grower sales are forbidden. The reason is that after picking Cosmic Crisp apples start converting starches to sugar. The more starch when picked the sweeter it will become over time.

Edit: The cross also explains why it is both tart and sweet. Pink lady is the Disco Smile of apples... lots of tart, lots of sweet. Like... Crispy lemonade. Pink Lady = Lady Williams x Golden Delicious. Lady, aka Api, is a very old (~17 century) French Cultivar. Lady Williams is a 20th century apple from Australia.
Two part question. I found oxtail for quite cheap so I decided I'd try to braise a kilo of it. I made up the braising liquid as I went along so it was basically a beef stock (bullion cubes) base with some soy sauce, mirin, gochujang, gochugaru, garlic, salt, pepper.
The cross is with an Enterprise apple and honey crisp. Enterprise are supposed to be less bruisable than a honey crisp but still have the sweet/juicy qualities of it in the cosmic crisp. I'm super in on both cosmic crisp and honey crisp and basically don't eat other apples other than a pink lady in a pinch.
