When they're about six inches tall, add another layer of soil on top of them so that only the top inch or two is showing. Then work a few more seed potatoes into this layer.
I refuse to buy seed potatoes from any mail-order catalog. The cost and especially shipping is enough to turn me off. I buy my seed spuds from a local farm store. The selection isn't always that great, but they're certified disease free and I get to pick and chose those with the most eyes.
If walmart hasn't already run your local seed and feed/ farm supply store out of business,it is the best place to find seed potatoes. Even there it is hard to find sprounting potatoes in the fall. Fall is actually the best time to plant them. They will provide a heavier yeild, growing all winter long.
