Martell XO is both spicy and rich. It starts off with the refined softness of the Borderies, and is followed by the intense of flavor of Grande Champagne eaux-de-vie. On the nose there are aromas of ground spice (black pepper, coriander), red berries, rich fruit flavors of fig chutney and compote.
It is made exclusively of wine—most commonly from Ugni Blanc —from the Charente and Charente-Maritime regions surrounding the town of Cognac in southwestern France. After a second distillation in antique copper pot stills (called charentais), the spirit is transferred to French oak barrels and aged a minimum of two years (VS).
