Classic Oreo icebox cake gets freshened up with whipped cream cheese filling and lots of juicy raspberries. This no-bake dessert recipe is made for summer!
BEAT cream cheese and sugar in large bowl with mixer until blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Stir in chopped cookies. Pour into crust. BAKE 55 min. to 1 hour or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim.
Chop 15 cookies coarsely. Finely crush remaining cookies; mix with butter. Press onto bottom of 13x9-inch pan. Refrigerate while preparing filling.
Top the cheesecake with whipped cream and cookies before slicing and serving. Tip: For cleaner slices, chill the cheesecake in the refrigerator for at least 30 minutes.
