An egg coffee (Vietnamese: Cà phê trứng) [1] is a Vietnamese drink traditionally prepared with egg yolks, sugar, condensed milk and robusta coffee.The drink is made by beating egg yolks with sugar and condensed milk, then extracting the coffee into the cup, followed by a similar amount of egg cream, or egg yolks which are heated and beaten, or whisked.
In 1232, after usurping the Lý dynasty, Trần Thủ Độ forced the descendants of the Lý to change their surname to Nguyễn. When Hồ Quý Ly overturned the Trần dynasty, he killed many of their descendants so when the Hồ dynasty collapsed in 1407, many of his descendants changed their surname to Nguyễn in fear of retribution.
