You can't make saddles in minecraft but you can in mo creatures mod :P. how to saddle a horse? First make sure there's nothing in ur hand then right click the horse. Keep getting on it until you can access its inventory or until hearts appear. Go into its inventory then place the saddle in the saddle slot where ur armor usually goes.
I think horses will become completely invisible, including the saddle. But if you are using a resource pack and you can retexture the pig's saddle, I would suggest to do that. Rollback Post to Revision RollBack

Not being able to craft saddles is ridicules as horses are in the game to ride. Otherwise they serve no purpose. it should be something you can do once you get the stuff, you should not have to go into a dungeon or trade with villagers for a saddle. turning it off IS stupid. just like they turned off Infinite lava in single player mode. a mode that doesn't hurt anyone. they should at least ...

Yeah, that is pretty much the only way to get saddles on Minecraft. Hopefully in a future update they will make them craftable. If you really want to go above and beyond, I bet there is probably a mod you can download that enables craftable saddles on your world.
