It's no secret that some 5e skills are much more useful than others on average, to the point where choosing a skill for flavor (ex: Religion) often feels bad when you could be taking something that will most definitely be usefully (ex: Perception). In my experience as both DM and player, this is my skill tier list: Tier A: Feels good to take.
5e Ability & Skills Summary Cheat Sheet. Both as a player and a DM I was getting tired of having to flip through the PHB to read up on skills and abilities. So, I created a summary sheet and thought I would share in case others could use it as well. It's a very plain document, without no fancy graphics or crafty layout.

Constitution gets two new skills added: Drinking - pretty self explanatory for alcohol (mostly) Endurance - Since athletics is too broad imo, also is used to add (or subtract) to death saving throws. Its kinda ridiculous a level 20 barbarian has just as much chance to fail death saving throws as a lvl 1 wizard.
However, in practice, it’s far too limited. Instead of a favored foe, they should have proficiency in a given type of terrain (desert, underdark, water, etc), and then all creatures native to this would be favored foe. This is how VtM 5e works. You put xp into a skill then you can also pay xp for a specialty.
Tier 2: Useful, I enjoy having this skill and this feels like it matters. Tier 3: Rarely comes up, benefits of this skill are rare or unclear. A few of my personal impressions: Tier 1: Athletics, Arcana, Perception. Tier 2: Investigation, Persuasion, Stealth. Tier 3: Animal Handling, History, Perform.
Therefore, the list above is a list of adventure ideas and plot points at the same time. Make any challenge very important/difficult/exciting to accomplish - and it becomes an idea for the adventure or a campaign. Make any adventure idea relatively small and simple - and it becomes a scene challenge (encounter).
