GSHS offers students programs in Drama, Marching Band, Choir, Art and Painting Classes. Grand Saline's Theater Department presents several shows each year, including Shakespeare and musical theatre. Additionally, the theater department has a strong program in East Texas competing in numerous One Act play performances.
During homecoming week, there are several dress-up days for students to participate in. Greenville's theatre department presents bi-annual productions: a play in the fall and a musical in the spring. Any student who attends the school is able to audition for a role in these productions and apply for backstage positions.
In 1964, Woodbridge House became an annexe for GSSHS. Around thirty students were involved in the High School Certificate courses, and the house provided a non-institutional learning environment for the small student community. Students were able to recover the wind vane missing from the house, which was discovered in the mud of the river bed.
