I'm from Birmingham too. A balti is called such purely because it is cooked (and served) in a balti dish. They tend to be milder than a "curry" - although curry in itself is a misnomer as it comes from a word meaning sauce and is purely a generic term to describe a range of food. A Balti is a curry, but a curry isn't necessarily a balti.
