Le Palais is a high end restaurant in Taipei, Taiwan specializing in Cantonese cuisine. It was the first restaurant in Taiwan to be awarded three Michelin stars.

It is most commonly treated as a variety of Chamaecyparis obtusa in European and American texts, [1] but more often accepted as a distinct species by Taiwanese botanists. [3] [4] The two taxa differ in ecological requirements, with C. obtusa growing primarily on drier ridgetop sites, while C. taiwanensis occurs on moist soils and with higher rainfall and air humidity.
In 2014, Chiang opened the restaurant RAW in Taipei, Taiwan. [1] In 2024 RAW did a two week pop-up restaurant in the Raffles Hotel, Singapore. [2] In 2024 Chiang announced that RAW would be closing and that he would be opening a cooking school in its place. [3] [4] [5]
MINIMAL was founded by Chef Arvin Wan. Wan is a native of Taichung who studied at the National Kaohsiung University of Hospitality and Tourism (NKUHT). Following time spent working at traditional restaurants and an ice cream parlor Wan opened a restaurant named Sur with his friend and fellow NKUHT graduate Lin Yi-hua where Wan managed the dessert side.
