    The best vegan mac and cheese ever has to be from Homegrown Smoker in Portland, OR. They recently had a Kickstarter to fund their 2nd food cart. One of the "prizes" for donating was a copy of their mac-no-cheese sauce. I am so stoked and I cannot wait to get it.

    Some imitation vegan cheeses are really good these days though. Which is why I'm so surprised Taco Bell took such an L on this. To clarify I'm not vegan, just severely lactose intolerant with the added bonus of having pretty bad issues with rendered saturated fats. I guess I'm like a forced semi-vegetarian?

    I've only been vegan since October of 2023 and feel pretty proud of the cook I've become, but I'm not so great at pinpointing flavor notes, especially since I can't exactly refer to the non-vegan foods. Thanks for any pointers. And yes I'm eating other foods besides junk. I just want to get better recipes for the fun foods I used to enjoy.

    Another good vegan cheese sauce for nachos is Siete brand - I get it at Whole Foods. I think it’s cashew based. You can microwave it right in the jar and pour over your chips! You can also top them with my world famous nacho sour cream, which is literally just kite hill sour cream mixed with taco seasoning (I love Bearitos brand ).
