Pressure canning allows you to put up nutrient-dense meat, vegetables, soups, stews, and stock. Since they’re low-acid foods, they cannot be preserved in a water bath canner, and they require the higher temperatures of a pressure canner for safe preservation.
Here’s a list of some of my “go to” pressure canning recipes that are easy enough for a beginner, and are useful enough for the most seasoned of canning veterans!
Follow one of our low-acid, pressure-canning recipes when preparing your produce. Fill each jar with the prepared food and liquid needed, using a ladle and funnel. Release any trapped air bubbles using a rubber spatula or a plastic canning wand between the jar and food to release trapped air.
All of these recipes are pressure-canning recipes because they include hearty ingredients like meat and vegetables. Canning jam, fruit, and pickles in a water bath canner does preserve food, but it just provides condiments and dessert, not the heart of the meal.
