All these post for dino ribs got me motivated to give it a go for the first time. Done plenty of pork ribs, done short ribs, never done dino ribs. Called up local Mariano's Fresh Market, talked to the butcher and told him what I was looking for. He said they cut them from their standing rib roasts. Full rack is 7 bones.
Legendary Pitmaster. Plate ribs (Dino ribs) are a fun cook. When a rack is done the meat pulls back pretty far from the end of the rib. That’s called “hillbilly teef” that’s about when you know they are done, but make sure they pass the probe test and not just temp. Keep that heat at 250-275 and go for probe tender.

Since that post, I've done bone-in short ribs from Whole Foods several times in my sous vide, and I can say that the consistency and marbling of the meat on the actual short ribs in NO way seemed to be the same cut of meat as what I got from Costco in a "boneless short ribs" package.

On the receipt though, it said, "$2.29 each", and I'm going to give them a call and ask if it's $2.29 per package or $2.29/lb. If it's $2.29 a package, I think we might buy like a 6-pack of them, for that price!
North Texas, Texoma. Oct 24, 2024. #1. Marinaded ribs in my usual Korean marinade. Made some fried cabbage and Keto baked beans. I use to get the ribs at Sam's and they where so good but they been to expensive and not bought any in a while. I caught some a couple times at Albertson for 1/2 off.
I just used the Lillie's sauce they show on some ribs . It's good stuff for what I like . I've had a few different sauces and rubs from Lillie's , and they were all good in my opinion . I use a lot of the Bachan's , but mostly in stir fry stuff . It does work for grilling steaks too . Gives a nice char .
Check the date on them. Love me some Baby Backs. Typically for me they run $2.59 to $2.99 # at Sam's Club, Smithfield vacuum packs. Never frozen. I always repackage mine into half racks, two halves to a bag, freezer packs. My usual is a half rack per person. Meat in the freezer is like Money in the Sm00ker Bank. LOL!

Been awhile since I smoked beef ribs, I was just waiting for them to go on sale. And I've bought their bonesless/skinless chicken breast before, and they are fresh and really good in size too. So this week it's ribs for the weekend, and about 12 breast for the freezer, and a few lbs. of some flap meat for quick burritos.
