If you're talking about the mod library, close the app, then go to %appdata\Doki Doki Mod Manager!\GameData\mods in File Explorer and rename them from there. If you're talking about the installed game list, it is currently not possible unless you want to dig around in the install.json file. I'll add this to my to-do list though.
