Within the narrarative of the game, they are both still humans. " Varient humans" aren't something that exists in the world of the game.

V.human is exactly what I'd make humans for 5e. Such complaints tend to be overblown, and most folk just play what interested them to begin with. Rather than go by the popular opinion, just go with what you find works or doesn't work for your individual table and as you grow experienced with the game, it tends to work out better that way.
Variant Human is an optional rule that basically says "If you're playing in a game using feats, you should use this as your Human race, instead of the default one." I don't think it's intended that both different versions of human actually exist in the world. Also, feats and ability score increases don't exist in game-world, they're mechanical ...
We just say 'variant human' so when people say "I rolled a human' versus 'I rolled a variant human' people know which racial advantages they used. Variant Human gets 2 plus 1s to whatever ability scores they wish a free feat and an extra proficiency. There are many regional variations in the phb, but yeah, those are purely flavor.
