Cucumbers, spices, herbs, and slices of bread are put in a glass jar with salt water and kept in direct sunlight for a few days. The yeast from the bread, along with other pickling agents and spices fermented under the hot sun, give the cucumbers a unique flavor, texture, and slight carbonation.
The most basic version of this sandwich consists of bread and cucumber slices. One recipe from 1919 gives the following instructions: "Spread white bread with butter and a dash of mayonnaise dressing. Slice fresh cucumbers, soak in salt water, dip in vinegar and drain. Put between two bread slices and serve immediately." [3]
One of the first printed recipes for Olivier salad, by Aleksandrova, appearing in 1894, called for half a hazel grouse, two potatoes, one small cucumber (or a large cornichon), 3–4 lettuce leaves, 3 large crayfish tails, 1/4 cup cubed aspic, 1 teaspoon of capers, 3–5 olives, and 1 1 ⁄ 2 tablespoon Provençal dressing (mayonnaise).
