Hilliard's Beer was a brewery located in Seattle, Washington, United States. The brewery opened on October 7, 2011, in the city's Ballard neighborhood , in a building constructed in 1947. The company is named after its founder Ryan Hilliard, a former flight instructor.
It was started in August 2008 by Alejandro Brown with a Belgian-style wheat beer and an Irish red ale. [1] The brewery is located in Pacific Rim Brewing's former facility. [2] It features a tasting room and lounge. [3] As of 2009, the beer was available at over 70 bars and restaurants in the Puget Sound region. [4]
In 1977, Rose Ann and two friends opened Truffles, a small specialty grocery store in the Laurelhurst neighborhood of Seattle that sold imported and domestic beer, corned beef from Katz Deli in New York, and cheesecakes. The Wise ESB was the brewery's first beer. Elysian has won multiple awards for their beers. The Wise, Dragontooth stout, and Avatar Jasmine IPA have done well at the World Beer Cup.
