It is a French dish called Poularde Homardine (meaning literally lobster chicken) and is a lobster stuffed inside a roasted chicken; and it was dubbed the chobster. The dish was created in the 19th century and fell into obscurity until some French chef brought it back.

Where can I buy Max’s very cool apron? My husband and I are big fans of the show and for Christmas he’s added Max’s apron (or similar) to his very small list. Anyone know where it’s from? I’m talking specifically about the one with leather or possibly suede fabric and the little latch at the top, as worn in the Pemmican episode recently.

I'd love to hear more about your experiences with the recipes, how many recipes you've made, etc, in the comments. I'm going to confess right here that even though I've seen every single episode ...
It was so much better than the corn syrup recipes. It didn't burn your throat from the amount of sweetness, you could really taste the pecans, and like Max said in the video, the pecans on top really had an added roasted flavor to them, giving this pie an extra layer of flavor. This pie will now be a holiday staple.
