To the OP: There are basically 3 trim levels. Standard LJ (4 wheel disc brakes, Dana 44 rear, AC, Cruise, fog lights etc standard), Rubicon (adds 241 TC case, F/R lockers, Front D44/D30 hybrid axle, side rocker panel guards, 16" MOAB wheels), and the LJ Rubi/Sahara (Adds different trim seating, unique stickers and badging).

The others in between offer different features and creature comforts. Some are special/limited edition packages. I can't really explain it any better than that.
There is no engine option on a JK / JKU, regardless of whether it is a Sport, Sahara, or Rubicon. All 2012 - 2018 JK / JKUs have the same 3.6 liter V6 with VVT. If you go to the following website, you can download a PDF document with this information. It still leaves vague some of my questions, though.
