If you want a table to appear sorted by a certain column, you must sort the wikitext itself in that order. This is usually done for the first column. The VisualEditor makes it easy to move individual table columns and rows around. For info about that, and also about putting a table in initial alphabetical order see § Initial alphabetical order.
To avoid this problem when doing an alphabetical sort, select all of the table except the header rows. To do so with multiple columns click the top left non-column-header cell, and then shift-click the bottom right cell. Such a component or property is called a sort key. For example, the items are books, the sort key is the title, subject or author, and the order is alphabetical.
