    Toasted sesame oil, which is what you are referring to, adding at the end, has a lower smoke point, plus the flavor stays with it better, just adding at the very end.

Even "red" (ie active) rust isn't likely to go deep unless the knife has been corroding for a long time. A bit of work with some metal polish will fix it.
