At first, agriculture prospered and early European settlers quickly cleared native vegetation and planted cereal crops. Initially, wheat was the mainstay of the area. The success of the first two decades of farming was mirrored in the construction of a flour mill at nearby Old Noarlunga and of the growth of that town.
The town quickly boasted churches and chapels, a brewery, wind flour mill, court house and police station. Agriculture consisted of cereal, mixed farms and vineyards. 1852 saw the formation of the Morphett Vale District council which merged with Noarlunga in 1932. During the second world war the district was a major producer of flax.

The remainder of Morphett Vale council was annexed by Noarlunga 75 years later on 12 May 1932 along with part of the District Council of Clarendon. This was as part of the statewide push in the early 1930s to consolidate local government into fewer governing bodies as promulgated in the Local Government Areas (Re-arrangement) Acts 1929 and 1931 .
