For the cpu, below 80C is good, below 90C is fine, up to 95C is alright for short periods of time, above that is an issue. To cool it use a cooling pad, try undervolting, repast, limit fps, disable boost, lower ambient temperature, play in a walk-in freezer, Legit, anything under 100c it will run for 10 years or more.

There is option in bios to limit max temp and cpu will self-adjust to it, but will mean it will slow down a bit when it reaches max temp. You can set there a limit of 85 or 80C. There is also option to adjust cpu fan curve and you can set it higher, like 55C start using 100% fan speed. This will keep cpu a bit cooler, but may be noisier.
Gaming is around 60-65. I've seen momentary spikes up to 76, and if I have a really sustained workload, average temps max out around 70-72. Up to 75 should be perfectly fine still for boosting and operating. If you start pushing 80 or higher regularly, it's time to look for better cooling.

I have a 5800X with PBO enabled (5GHz boost) and a NH-D14 cooler with 2x NF-A12X25 fans instead of the stock fans. My idle temps are 35-40°C and gaming temps are 50-65°C (depending on the game). While 80°C should be fine, it's probably affecting your boost frequencies and thus is probably impacting performance.
